Instructions

Step 1: Prep and Sear

  1. Preheat your oven to 450°F.
  2. Rub the 4 1/2 to 5 lbs pork roast thoroughly with salt and black pepper to taste.
  3. Place the seasoned roast in a large roasting pan and place in the oven. Brown the roast on all 4 sides for 20 to 30 minutes until a deep golden-brown crust forms, then remove the pan from the oven.

Step 2: Assemble and Slow Roast

  1. Turn the oven temperature down to 300°F.
  2. Scatter the 3 to 4 lbs sauerkraut, 4 tart green apples, and 1 medium onion all around the roast in the pan.
  3. In a separate bowl, mix together the 3/4 cup brown sugar, 2 tsp prepared mustard, 1 tsp caraway seeds, and 3/4 cup dry white wine.
  4. Pour this mixture evenly over the roast and the surrounding kraut.
  5. Return the pan to the oven and cook at 300°F for 4 1/2 hours. Check occasionally to make sure the roast doesn’t get too dry; the meat should be fork-tender and pull apart easily when done.

💡 Make-Ahead & Storage: This dish tastes even better the next day as the flavors of the sauerkraut, apples, and pork meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
