Instructions

Step 1: Prep and Initial Bake

  1. In a large mixing bowl, combine the 2 lb. ground beef, 1 cup cracker crumbs, 1 cup milk, 1 tsp oregano, 2 eggs, 1/2 cup onion, 1/2 cup Parmesan cheese, 2 tsp seasoned salt, and 1/4 tsp black pepper. Mix all ingredients well until thoroughly combined.
  2. Press the mixture evenly into a 9x9 inch pan or divide into 2 loaf pans.
  3. Bake at 350°F for 45 minutes. Carefully pour off any accumulated drippings from the pan.

Step 2: Add Toppings

  1. Spread 1/2 jar pizza sauce evenly over the top of the meatloaf.
  2. Return to the oven and bake for an additional 10 minutes.
  3. Sprinkle 1 cup mozzarella cheese over the sauce and bake for a final few minutes until the cheese is completely melted, bubbly, and lightly golden brown.

💡 Make-Ahead & Storage: The meatloaf mixture can be pressed into the pan, covered tightly, and refrigerated up to 24 hours before baking. Add the pizza sauce and mozzarella cheese during the final stages of baking as directed.
