Cream Sauce

Instructions

Step 1: Prep and Broil Eggplant

  1. Brush 2 med eggplant slices with oil and place in broiler till lightly browned. Remove.

Step 2: Make Meat Sauce

  1. Brown 1 lb. ground lamb or beef and 1/2 c. chopped onion.
  2. Add 8 oz. can tomato sauce, salt and pepper, 2 Tablespoons parsley, and 1 teaspoon nutmeg.
  3. Cook and mix till juice is absorbed.

Step 3: Make Cream Sauce

  1. Heat 2 cups milk, add 2 beaten eggs, 1/4 c. flour, and 1/2 tsp. salt.
  2. Cook over moderate heat and stir constantly until it boils and thickens.

Step 4: Assembly and Baking

  1. Butter pan with butter. Sprinkle with grated cheese and 1 cup bread crumbs.
  2. Arrange 1/2 of 2 med eggplant slices. Spread 1/2 of the cream sauce. Spread all meat sauce. Arrange the rest of the eggplant slices.
  3. Sprinkle with grated cheese and bread crumbs. Spread the rest of the cream sauce. Sprinkle with grated cheese.
  4. Bake 30 minutes at 350 degrees, then 15 minutes at 400 degrees until bubbly and golden brown.

💡 Make-Ahead & Storage: Assemble the casserole ahead of time, cover, and refrigerate for up to 24 hours before baking.
