Instructions
Step 1: Prepare the Filling and Sauce
- In a skillet, brown the 1 lb. ground beef; drain excess fat if necessary. Add the chopped 1 onion, 2 cloves garlic, 1 pinch oregano, and 1 tsp chili powder. Cook for 5 to 10 minutes until the onion is soft and translucent.
- In a separate pan, dilute the 1 can enchilada sauce with 1/2 can water. Heat slightly until warm.
Step 2: Assemble and Bake
- Soak the 1 pkg. tortillas briefly in the warm enchilada sauce to soften them.
- Spread each soaked tortilla with a portion of the cooked ground beef mixture, some of the 1 lb. grated cheddar cheese, and the chopped 1 small can black olives. Roll them up and place them seam-side down in a square baking dish.
- Sprinkle the remaining 1 lb. grated cheddar cheese over the rolled tortillas, then pour the remaining enchilada sauce evenly over the top.
- Bake for 12 to 20 minutes in a preheated 400°F oven until the cheese is melted, bubbly, and slightly golden brown at the edges.
