Instructions

Preparation and Cooking

  1. Wipe the 4-5 lbs corned beef brisket with damp paper towels.
  2. Place the brisket in a large kettle and cover completely with cold water.
  3. Add the 1 clove garlic, 2 whole cloves, 10 whole black peppercorns, and 2 bay leaves to the kettle.
  4. Bring the liquid to a rolling boil, then reduce the heat and simmer for 5 mins.
  5. Skim any foam or residue from the surface using a slotted spoon.
  6. Cover the kettle with a tight-fitting lid and simmer gently for 3-4 hours or until the meat is fork-tender.
