Instructions

Step 1: Prep and Cook Chicken

  1. Cook the 3 lb. hen in 3 cups chicken stock until real tender so you can pull it off the bone and cut it up.

Step 2: Pasta and Assembly

  1. Boil the 1 small package spaghetti for ten minutes and drain (it isn’t necessary to break, but if you do, don’t break into small pieces).
  2. Mix 1 onion, 1 bunch celery, 1 bell pepper, 1 T. Worcestershire sauce, 1 small can mushrooms, salt & pepper to taste, and pimentos for color together with the cooked chicken and spaghetti.

Step 3: Baking

  1. Bake everything together in a baking dish in a moderate oven about 350° for about 1 hour (maybe longer), stirring two or three times while baking until piping hot and bubbling.

💡 Make-Ahead & Storage: Assemble the casserole in the baking dish ahead of time, cover, and refrigerate for up to 24 hours before baking.
