Instructions
Step 1: Prep and Sauté
- Preheat the oven to 350°F. Grease a 10x13-inch baking pan.
- In a skillet over medium heat, brown the 1 chopped onion in 2 tablespoons butter until soft, translucent, and fragrant.
Step 2: Mix the Sauce
- In a large mixing bowl, dissolve the 2 chicken bouillon cubes in 1 cup hot water.
- To the bowl, add the sautéed onion, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can boned chicken, and 1 can chopped green chile. Mix well until thoroughly combined and creamy.
Step 3: Assemble and Bake
- In the prepared 10x13-inch baking pan, create the first layer starting with corn tortillas, followed by a layer of the chicken mixture, and then 1 pound grated cheese.
- Repeat the layers once more, ending with a generous layer of grated cheese on top.
