Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, combine the 1 cup spinach and ⅔ cup ricotta cheese. Add the ¼ tsp garlic powder, ¼ tsp ground nutmeg, ½ tsp salt, and ⅛ tsp pepper, mixing thoroughly until well incorporated.

Step 2: Assemble and Bake

  1. Stuff the cheese and spinach mixture equally into the 4 manicotti noodles.
  2. Divide the stuffed noodles evenly into 2 individual shallow baking dishes.
  3. Spoon 2 Tbsp. of ½ cup marinara sauce over each noodle, then top each with 1oz. of 2 oz grated mozzarella cheese.
  4. Bake uncovered at 350° for 20 minutes until the cheese is bubbly and lightly golden.
