Instructions

Step 1: Prep and Brown

  1. Preheat oven to 350°F (175°C).
  2. Season the 1 (4-pound) brisket with salt and pepper to taste.
  3. Heat the fat or oil in a large, heavy pan over medium-high heat and brown the brisket on all sides until nicely seared, about 20-25 minutes total.

Step 2: Roast and Rest

  1. Transfer the browned meat to a roaster with a secure lid.
