Instructions

Step 1: Build the Base

  1. Melt ¼ cup table fat in a skillet, fry 1 large onion and sliver garlic lightly until translucent and fragrant; add 1 cup tomatoes.

Step 2: Simmer the Sauce

  1. Simmer for 10 minutes until the tomatoes break down and thicken.
  2. Add 2 cups diced leftover beef, 1 cup beef stock, and 1 teaspoon paprika and let simmer.

Step 3: Saute Mushrooms

  1. In a separate pan, saute ½ lb mushrooms until golden brown, then add them to the meat mixture.

Step 4: Thicken and Finish

  1. Make a paste of 1 tablespoon flour and 1 tablespoon water, then add to the mixture, stirring constantly until smooth.
  2. Add ½ teaspoon salt, dash pepper, and ¼ cup thick sour cream.
  3. Heat through gently until hot, but do not boil to prevent curdling.
