Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the 1/2 cup butter, 1/2 pint sour cream, and whole 1 egg until smooth.
  2. In a separate bowl, sift together enough flour (to thicken the mixture so that it can be rolled very thin), 1 tsp baking powder, and a pinch of salt.
  3. Gradually incorporate the dry ingredients into the wet mixture until a manageable dough forms.

Step 2: Assemble and Bake

  1. Roll the dough out very thin on a lightly floured surface. Cut into rings using a 2 1/2-inch diameter cutter.
  2. Place a teaspoon of your chosen filling (meat, apples, fruit conserve, or fruits) onto the center of each dough circle.
  3. Fold the dough over the filling to create a half-moon shape and pinch the edges tightly together to seal.
  4. Place the assembled pies on a well-greased baking sheet, paint the tops lightly with the beaten 1 egg, and bake at 425°F until golden brown and fragrant.

💡 Make-Ahead & Storage: Unbaked assembled pirozhkis can be frozen on a tray before transferring to a bag for up to 1 month; bake directly from frozen, adding a few extra minutes to the bake time.
