Instructions

Step 1: Parboil the Beans

  1. Parboil the 1 lb fresh green beans in a small amount of water for about 5 minutes; drain and set aside.

Step 2: Stir-Fry the Meat and Aromatics

  1. Heat the 2 tablespoons peanut oil in a wok.
  2. Add the ½ lb lean beef, 2 tablespoons sesame seeds, and 2 green onions.
  3. Stir fry for a few minutes until the meat is done and lightly browned.

Step 3: Combine and Simmer

  1. Add the parboiled beans, 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1½ teaspoons sugar; stir well to combine.
  2. Cover the wok, lower the heat, and simmer until the beans are barely tender—about 5 minutes.
  3. Do not overcook, keeping the beans crisp-tender, then serve with rice or ramen noodles.
