Instructions

Step 1: Marinate the Beef

  1. In a large bowl, combine the 1 C. brown sugar, 1 clove garlic, 1/2 C. red wine vinegar, 1/2 C. burgundy wine, 1/8 tsp. nutmeg, 1/4 tsp. powdered ginger, 1/2 tsp. cinnamon, 1 bay leaf, 2 med. onions, and 1 tsp. seasoned salt.
  2. Place the 3-4 lbs. beef chuck in the large bowl and pour the marinade over it, ensuring the meat is completely covered.
  3. Marinate the meat in the refrigerator for 24 hours, turning frequently.

Step 2: Braise and Serve

  1. When ready to cook, preheat the oven to 325°F.
  2. Transfer the beef roast and all of its marinade into a Dutch oven.
  3. Cook covered in the oven at 325°F for 2 1/2 to 3 hours, or until the meat is fork-tender.
  4. Remove the beef roast to a hot serving platter.
  5. Serve with rice, pouring the flavorful juices from the Dutch oven over each helping until well coated.
