Instructions
Step 1: Prep and Season
Step 2: Brown the Chicken
- In a deep, heavy pot, melt the 1/4 C Butter. Brown the chicken pieces in the butter until golden brown on all sides.
Step 3: Mix Sauce and Simmer
- In a small bowl, combine the 2 T Salad Oil, 1/4 t Thyme, 1/4 C Lemon Juice, 1 T chopped Onion, and 1/2 clove minced Garlic.
- Pour the lemon juice mixture over the chicken in the pot.
- Cover and cook slowly over low heat until the chicken is tender and cooked through, about 30 to 40 minutes.
Step 4: Serve
- Serve warm over hot cooked Rice.
