Instructions

Step 1: Prep and Season

  1. Cut the 1 Fryer into pieces, and season evenly with 1/4 t Salt and 1/4 t Pepper.

Step 2: Brown the Chicken

  1. In a deep, heavy pot, melt the 1/4 C Butter. Brown the chicken pieces in the butter until golden brown on all sides.

Step 3: Mix Sauce and Simmer

  1. In a small bowl, combine the 2 T Salad Oil, 1/4 t Thyme, 1/4 C Lemon Juice, 1 T chopped Onion, and 1/2 clove minced Garlic.
  2. Pour the lemon juice mixture over the chicken in the pot.
  3. Cover and cook slowly over low heat until the chicken is tender and cooked through, about 30 to 40 minutes.

Step 4: Serve

  1. Serve warm over hot cooked Rice.
