Instructions

Step 1: Prep and Cook Macaroni

  1. Preheat oven to 350°F (175°C). Grease a casserole dish.
  2. Cook the 1/2 cup macaroni according to package directions. Drain and set aside.

Step 2: Brown the Meat and Vegetables

  1. In a large skillet, sauté the chopped 1 bell pepper and 1 onion until softened.
  2. Add the 1 pound ground meat to the skillet and cook until completely browned, breaking it apart. Drain any excess fat.

Step 3: Combine and Bake

  1. In a large bowl, combine the cooked macaroni, chopped 1 cup ripe pitted olives, 1 cup corn, and 1 can tomatoes with their juice.
  2. Add the cooked meat mixture to the macaroni bowl and stir everything to combine. If the mixture seems too dry, thin it with a splash of olive juice or tomato juice.
  3. Pour the entire mixture into the prepared casserole dish and spread evenly.
  4. Top the mixture generously with the 1/2 pound cheese.
  5. Bake for 45 minutes, or until the casserole is hot throughout and the cheese is melted, bubbly, and golden brown.
