Instructions
Step 1: Prepare the Sweet Potatoes
- Cook and mash the 6 med sweet potatoes. Add 1 T oleo, salt & pepper, pinch nutmeg, and milk to whip until light and fluffy.
Step 2: Sauté the Ham and Filling
- In a skillet, melt 2 T margarine and sauté the 2 c cut up cooked ham, stirring constantly until golden brown.
- Add the 1/2 c green pepper (or pimento) strips and 1 can (#2) drained pineapple chunks, cooking for 2-3 minutes until slightly softened.
Step 3: Make the Glaze and Combine
- In a small bowl, combine the 2 T brown sugar and 1 T cornstarch, then stir in the 3/4 c pineapple juice and 2 T vinegar.
- Add the liquid mixture to the skillet and cook, stirring until the sauce is clear and thick.
Step 4: Assemble and Bake
- Pour the ham and pineapple mixture into a 9-inch pie plate.
- Drop spoonfuls of the whipped sweet potatoes on top of the ham mixture.
- Bake at 350°F for 15-20 minutes until bubbling hot and golden on top.
