Instructions

Step 1: Prep and Layer

  1. Preheat oven to 350°F. Grease a casserole dish.
  2. Arrange the 1 #2 can beef enchiladas in a single layer in the bottom of the prepared dish.

Step 2: Mix and Top

  1. In a medium bowl, combine the drained 1 #2 can pinto or kidney beans, the undrained 1 #303 can tomatoes, and the chopped 1 medium onion. Stir to mix.
  2. Pour the bean and tomato mixture evenly over the top of the enchiladas.
  3. Sprinkle the grated 1 cup sharp cheddar cheese all over the top.

Step 3: Bake

  1. Bake for 30 minutes, or until the casserole is hot and the cheese is bubbly and melted until golden brown and fragrant.
