Instructions
Step 1: Prep and Breading
- Preheat oven to 375°F.
- In a heavy saucepan, melt 1/3 cup butter.
- On a piece of wax paper, combine 1/2 cup fine dry bread crumbs, 2 T. grated Parmesan cheese, 1 t. basil, 1 t. oregano, 1/2 t. garlic, and 1/4 t. salt.
- Dip each 2 chicken breasts, split (about 1 1/2 lbs.) piece first in the melted butter, then roll in the crumb mixture to coat.
- Place the coated chicken skin side up in an ungreased 9-inch pan.
Step 2: Baking and Sauce
- Bake at 375°F for 50-60 minutes, or until golden brown and chicken is tender.
- Meanwhile, add 1/4 cup dry white wine or apple juice, 1/4 cup chopped green onion, and 1/4 cup chopped parsley to the saucepan with the remaining melted butter. Heat gently.
- When the chicken is done, pour the butter-sauce mixture around and over the chicken.
- Return to the oven for 3-5 minutes, or until the sauce is hot and bubbly.
