Instructions

Step 1: Prep and Cook Meat

  1. Preheat the oven to 350°F. Grease a 10x6 inch baking dish.
  2. In a skillet, brown the 1 pound ground beef and 1/2 cup onion. Drain off excess grease. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper until well combined.

Step 2: Assemble Casserole Layers

  1. In the prepared baking dish, arrange half of the 2 (4 ounce) cans green chiles in a single layer.
  2. Sprinkle all of the 1 1/2 cups cheddar cheese evenly over the chiles.
  3. Top the cheese with the cooked ground beef mixture, spreading it into an even layer.
  4. Arrange the remaining green chiles on top of the meat.

Step 3: Make Custard, Bake, and Serve

  1. In a separate bowl, combine the 1 1/2 cups milk, 1/4 cup flour, 4 eggs, the second 1/2 teaspoon salt, and hot sauce. Beat with a whisk until smooth.
  2. Pour the egg mixture evenly over the layers in the casserole dish.
  3. Bake for 50 to 60 minutes, or until the custard is set and a knife inserted in the center comes out clean.
  4. Let the casserole cool for 5 minutes before cutting into squares and serving.

💡 Make-Ahead & Storage: Store leftover casserole sealed in the refrigerator for up to 3-4 days; reheat gently before serving.
