Instructions

Step 1: Prep and Make the Sauce

  1. Preheat oven to 325°F. Grease an 11x13 inch baking dish.
  2. In a saucepan, combine the 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 small can taco sauce, 1 small can chopped green chilies, and 1/2 cup milk. Warm over low heat, stirring until smooth and combined.

Step 2: Cook the Meat

  1. In a separate skillet, brown the 1 1/2 lbs. ground beef and 1 medium onion (chopped) over medium-high heat until the meat is fully cooked. Drain any excess fat.

Step 3: Assemble and Bake

  1. Layer the ingredients in the greased dish as follows: a thin layer of sauce, half of the torn soft corn tortillas (torn in 1/4’s), half of the meat mixture, and half of the remaining sauce. Repeat the layers with the rest of the tortillas, the rest of the meat mixture, and the rest of the sauce.
  2. Sprinkle the grated cheddar cheese (or more) evenly over the top.
  3. Bake for 1 hour, or until the casserole is hot, bubbly, and the cheese is melted and golden brown.

💡 Make-Ahead & Storage: Assemble the casserole ahead of time and store covered in the refrigerator for up to 24 hours before baking, adding a few extra minutes to the bake time if needed.
