Instructions

Step 1: Prep and Brown

  1. Preheat oven to 350°F. Grease a large casserole dish.
  2. In a large skillet, brown the 2 pounds ground meat, 1 chopped onion, 1 clove garlic, and 1 green pepper. Drain any excess fat until the meat is fully browned and aromatic.

Step 2: Mix the Casserole

  1. Stir in the salt, pepper, and drained 1 can pimentos.
  2. Add the 1 can cream of chicken soup, 1 can cream of mushroom soup, drained 1 tall can whole kernel corn, cooked 3 cups rice or noodles, and 1 cup sour cream. Mix well until thoroughly combined.

Step 3: Bake and Serve

  1. Pour the mixture into the prepared casserole dish and spread evenly.
  2. Sprinkle the 1 can chow mein noodles evenly over the top of the casserole.
  3. Bake for 45 minutes to 1 hour, or until hot, bubbly, and the noodles on top are golden brown and fragrant.

💡 Make-Ahead & Storage: Store sealed in the refrigerator for up to 3-4 days; assemble ahead of time and add crunchy noodles just before baking.
