Instructions
Step 1: Prep and Season
- Season the 1½ lbs tenderloin of beef well with salt and pepper to taste, and let it stand for 2 hours.
Step 2: Prepare the Sauce
- Brown the 1 tablespoon flour in 1 tablespoon butter, work to a smooth paste, stir in 2 cups stock gradually, and bring to a boil.
- Stir in 1 tablespoon tomato paste and add the ½ lb mushrooms.
Step 3: Sear and Combine
- In a separate pan, sear the seasoned meat in 1 tablespoon butter with 1 tablespoon chopped onion until brown.
