Instructions

Step 1: Prep and Season

  1. Season the 1½ lbs tenderloin of beef well with salt and pepper to taste, and let it stand for 2 hours.

Step 2: Prepare the Sauce

  1. Brown the 1 tablespoon flour in 1 tablespoon butter, work to a smooth paste, stir in 2 cups stock gradually, and bring to a boil.
  2. Stir in 1 tablespoon tomato paste and add the ½ lb mushrooms.

Step 3: Sear and Combine

  1. In a separate pan, sear the seasoned meat in 1 tablespoon butter with 1 tablespoon chopped onion until brown.
  2. When brown, transfer the meat into the prepared sauce and simmer for 5 minutes until heated through and fragrant.
  3. Stir in 2 tablespoons sour cream, heat gently, and serve immediately.

💡 Make-Ahead & Storage: Best served fresh, but the sauce and meat mixture can be prepared a day ahead without the sour cream, then reheated and finished with sour cream just before serving.
