Instructions

Mixing and Baking

  1. Cream the 1/2 cup butter and 1 cup sugar together until light and fluffy.
  2. Add the 5 eggs (well beaten) to the mixture.
  3. Mix a part of the 1 3/4 cups flour with the fruit (3/4 lb glazed cherries, 1 lb raisins, and 4 cups pecans) so it won’t stick.
  4. Fold the rest of the 1 3/4 cups flour into the batter, then add the 1/2 oz vanilla extract and 1/2 oz lemon extract.
  5. Mix well and fold in the fruit and flavoring.
  6. Place in a cold oven, start the oven at 250 degrees, and bake for 3 hours until golden and a rich aroma develops.
