Instructions

Step 1: Prep and Mix Dry Ingredients

  1. Preheat your oven to 350°F.
  2. In a medium bowl, combine 2 1/4 cups flour, 1 1/4 tsp baking powder, and 1 tsp salt.

Step 2: Mix Wet Ingredients

  1. In a separate bowl, mix together 1 cup mashed bananas and 1 cup buttermilk.

Step 3: Cream and Combine

  1. In a large bowl, cream together 2/3 cup shortening and 1 1/2 cups sugar until light and fluffy.
  2. Add 1/2 tsp banana flavoring and 2 eggs to the creamed mixture and beat well.
  3. Alternately add the flour mixture and the banana mixture to the creamed shortening, mixing until just combined.

Step 4: Bake

  1. Pour the batter into a prepared baking pan and bake at 350°F for 30 minutes until a toothpick inserted in the center comes out clean.

Step 5: Frosting and Assembly

  1. In a medium bowl, mix together 8 oz cream cheese, 1/2 cup corn syrup, and 1/2 cup peanut butter until smooth and creamy.
  2. Frost the cooled cake and top with peanuts.
