Instructions

Chocolate Fluff

  1. In a chilled mixing bowl, combine 2 cups whipping cream, 1 cup sifted confectioners’ sugar, 1/2 cup cocoa powder, and 1/16 teaspoon salt.
  2. Beat the mixture until it is stiff enough to hold a point.
  3. Serve on wedges of cake. Makes about 4 cups of topping.

Orange Fluff

  1. In a double boiler, thoroughly mix together 3 egg yolks and 1/2 cup sugar.
  2. Stir in 1/3 to 1/2 cup orange juice.
  3. Cook over hot water, stirring constantly, until the mixture thickens, about 15 minutes.
  4. Remove from heat and stir in 1 tablespoon grated orange rind, then allow to cool completely.
  5. Gently fold in 1 cup whipped heavy cream and 1/2 cup chopped, toasted, blanched almonds (or 1/2 cup fresh grated packaged coconut).
  6. Serve on wedges of cake. Makes about 3 cups of topping.

💡 Make-Ahead & Storage: The Chocolate Fluff is best served immediately but can be chilled for a few hours. The Orange Fluff custard base can be made a day ahead and folded with whipped cream and nuts just before serving.
