Instructions

Step 1: Whipping the Frosting

  1. In the top of a double boiler, combine 2 unbeaten egg whites, 1 1/2 cups sugar, 5 tbsp water, and 1 1/2 tsp white corn syrup.
  2. Beat constantly over rapidly boiling water until the frosting holds its shape and stands in a stiff peak, which should take about 5 to 7 minutes.

Step 2: Flavoring and Coloring

  1. Remove the frosting from the hot water.
  2. Add 1 1/2 tsp mint flavoring and a small amount of red food coloring to tint it a delicate pink.
  3. Beat the mixture until it is thick enough to spread easily.

Step 3: Decorating

  1. Separate and tint 3 tbsp of frosting to a deeper pink shade using a bit more red food coloring.
  2. Fill and frost your cake, making decorative swirls with the back of a spoon.
  3. Fill the center of the swirls with the deeper pink shade of frosting for a beautiful two-tone effect.

💡 Make-Ahead & Storage: This frosting is best used immediately after preparation while still warm and pliable. It will set as it cools, so do not make it ahead of time.
