Instructions
Step 1: Boiling the Syrup
- Boil 3 1/2 cups sugar, 3/4 cup water, and 1 cup corn syrup together until it threads (reaches the thread stage).
Step 2: Mixing and Cooking
- Pour half of the hot syrup over 3 egg whites (slightly beaten) while continuing to cook the rest of the syrup until it reaches the hard ball test stage.
- Add this remaining hot syrup to the egg whites which have been beaten meanwhile.
- Beat well, fold in 1 cup pecans and 1 cup walnuts, and pour into a buttered dish until set.
💡 Make-Ahead & Storage: Store the cooled and sliced penuche in an airtight container at room temperature for up to one week.
