Instructions

Step 1: Dough Preparation

  1. Sift together 2 cups flour, 2 tsp. baking powder, and 1/4 tsp. salt onto waxed paper.
  2. Beat 1/2 cup shortening in bowl until fluffy, add 1/2 cup peanut butter & cream together until smoothly blended.
  3. Add 1/2 cup brown sugar and 1/2 cup granulated sugar, gradually beating after each addition.
  4. Add 1 tsp. vanilla and 2 eggs. Beat thoroughly.
  5. Add flour mixture gradually, beating until dough is stiff.

Step 2: Chilling and Slicing

  1. Divide dough in half & roll in wax paper.
  2. Place in refrigerator to chill until firm enough to slice, about 15 minutes.

Step 3: Baking

  1. Preheat oven to 400°F & cut rolls into slices, about 1/4 inch thick, & place on ungreased cookie sheet.
  2. Allow 1 inch between cookies for spreading.
  3. Bake at 400°F for 7-8 minutes until lightly golden.

💡 Make-Ahead & Storage: Dough can be rolled, wrapped in wax paper, and refrigerated or frozen until ready to slice and bake.
