Instructions

Step 1: Prepare and Chill the Dough

  1. In a large mixing bowl, mix well the 1 cup softened butter, 1/4 to 1/2 cup sugar, 1/2 teaspoon salt, and 1 teaspoon almond extract (or 2 teaspoons vanilla extract).
  2. Gradually blend in the 2 cups sifted flour and 1 to 2 cups chopped walnuts, pecans, almonds, or hazelnuts until a cohesive dough forms.
  3. Place the dough in the refrigerator and chill until it is firm enough to be easily handled.

Step 2: Shape, Bake, and Roll

  1. Preheat your oven to 350°F.
  2. Shape the chilled dough into 1-inch balls or small rolls and arrange them on an ungreased cookie tin.
  3. Bake at 350°F for 12 to 15 minutes until they are set and light brown on the bottom.
  4. While still warm, roll the baked cookies in additional sugar to coat them thoroughly.
