Instructions

Step 1: Batter Preparation

  1. Sift together the 3 cups sifted flour, 1 tsp salt, 1 tsp soda, and 1 tsp cinnamon.
  2. Add 1 1/4 c. cooking oil and 2 tsp vanilla to the dry mixture and beat until it forms a smooth batter.
  3. In a separate bowl, beat the 2 eggs until foamy, then gradually add 2 c. sugar until well blended.
  4. Fold the egg mixture thoroughly into the flour batter, then gently fold in 1/4 c. pecans and 3 c. chopped cooking apples.

Step 2: Baking

  1. Pour the batter into a greased and floured tube pan.
  2. Bake at 350 degrees for 1 hour, or until a tester inserted near the center comes out clean.
  3. Let set in the pan until cool before inverting and slicing.
