Instructions

Fluffy Orange Icing

  1. Cream the 1 1/2 (3 oz) packages cream cheese until light and fluffy.
  2. Gradually add the 2 1/2 cups sifted confectioners’ sugar and beat well until smooth.
  3. Stir in the grated rind of 2 oranges.
  4. If the icing is too thick, add a few drops of orange juice to reach a spreadable consistency.

Browned Butter Icing

  1. Melt 1/4 cup butter in a small saucepan, then keep over low heat until it turns a fragrant golden brown.
  2. Remove from heat and blend in 2 cups sifted confectioners’ sugar, 2 tbsp cream, 1 tsp cooking oil, and 1 1/2 tsp vanilla.
  3. Stir in 1 tbsp hot water.
  4. Stir vigorously until the mixture cools and reaches a spreadable consistency. If it becomes too thick to spread, warm slightly over hot water.
