Date Filling

Instructions

Making the Filling

  1. Combine the 2 cups dates, 3/4 cup sugar, 3/4 cup water, and optional 1/2 cup nuts in a saucepan.
  2. Cook slowly, stirring constantly until thickened.
  3. Remove from heat and let cool completely.

Making the Dough and Baking

  1. Mix thoroughly the 1 cup oleo, 2 cups brown sugar, 2 eggs, 1/2 cup water, and 1 tsp vanilla.
  2. Add the dry ingredients: 3 1/2 cups flour, 1/2 tsp salt, 1 tsp baking soda, and 1/8 tsp cinnamon, mixing well.
  3. Drop by 1 tsp of dough onto a cookie sheet.
  4. Place 1/2 tsp date filling in the center of the dough, then cover with another 1/2 tsp dough.
  5. Bake at 375 degrees F for 10-12 minutes until light brown.
