Instructions
Step 1: Combining and Boiling
- In a heavy saucepan, combine 1 cup brown sugar, 1 cup white sugar, 1/4 cup cream or milk, 1/2 cup coffee, and 1/4 tsp salt.
- Cook over medium heat, stirring constantly until the sugars are completely dissolved.
Step 2: Finishing and Setting
- Continue cooking without stirring until the mixture reaches the soft-ball stage on a candy thermometer.
- Remove from heat, add 1 tbsp butter, and let it cool without stirring until lukewarm.
- Beat vigorously until the mixture thickens and loses its gloss, then quickly stir in 1 cup nuts before pouring into a greased pan to set until firm.
