Instructions

Mixing and Baking

  1. Cream together the 1 C. shortening and 2 C. brown sugar in a large mixing bowl until smooth.
  2. Beat in the 2 eggs one at a time until well combined.
  3. In a separate bowl, whisk together the 3 C. flour, 3 tsp baking powder, 3/4 tsp salt, and 2 tsp cinnamon.
  4. Alternately add the dry flour mixture and 1 C. cold strong coffee to the creamed mixture, mixing just until combined.
  5. Fold in the 2 C. raisins gently until evenly distributed.
  6. Drop the dough by spoonfuls onto prepared baking sheets.
  7. Bake at 375 degrees for 12-15 minutes until golden brown and set.
