Instructions
Mixing and Baking
- Cream together the 1 C. shortening and 2 C. brown sugar in a large mixing bowl until smooth.
- Beat in the 2 eggs one at a time until well combined.
- In a separate bowl, whisk together the 3 C. flour, 3 tsp baking powder, 3/4 tsp salt, and 2 tsp cinnamon.
- Alternately add the dry flour mixture and 1 C. cold strong coffee to the creamed mixture, mixing just until combined.
- Fold in the 2 C. raisins gently until evenly distributed.
