Instructions

Step 1: Crust Preparation

  1. Combine the 2 cups graham cracker crumbs, 1/4 cup chopped walnuts, 1/2 tsp cinnamon, and 1/2 cup melted butter in a bowl.
  2. Reserve 3 tablespoons of the crumb mixture for the topping if not using fruit.
  3. Press the remaining mixture firmly into the bottom and up the sides of a 2 1/2-inch springform pan.

Step 2: Filling and Baking

  1. Combine all filling ingredients except the sour cream: 3 well beaten eggs, 2 8oz pkgs cream cheese, 1 cup sugar, 3 tsp vanilla, 1/4 tsp salt, and 1/2 tsp almond extract; beat until smooth.
  2. Gently blend in the 3 cups sour cream by hand until fully incorporated.
  3. Pour the mixture into the prepared crust and sprinkle the reserved crumbs over the top.
  4. Bake at 350°F to 375°F for 30 min until set and lightly golden.
  5. Cool completely, then chill uncovered overnight in the refrigerator until firm.
