Instructions

Baking Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. In a large bowl, combine 2 eggs, 3/4 cup oil, and 1 cup brown sugar until smooth.
  3. Stir in 2 cups raw grated carrots, 3/4 cup raisins, 1 tsp vanilla, and 1/2 cup nutmeats.
  4. Fold in 2 cups flour, 1 tsp baking soda, and 2 tsp baking powder until just combined.
  5. Pour batter into the prepared loaf pan and bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  6. For the topping, beat 2-3 oz cream cheese, 3 tbsp margarine, 1 tsp vanilla, 1 tbsp milk, and 1/2 cup powdered sugar until light and fluffy; spread over cooled cake.
