Instructions
Step 1: Custard Base
- Soak 2 tbsp gelatin in 1/3 cup cold water.
- Beat 2 egg yolks with 1/2 cup sugar.
- Pour 1 1/2 cups hot milk over the egg yolks mixture, add 1/2 tsp salt, and cook over a double boiler until the mixture coats the back of a spoon.
- Stir in the soaked gelatin and beat until completely dissolved; set aside to cool.
Step 2: Assembly
- Stir 1 cup applesauce and 2 tsp lemon juice into the cooled custard.
- Gently fold in the 2 beaten egg whites, 1/2 - 1 cup whipped cream, and 1/2 tsp vanilla extract.
- Pour into a mold and chill until set.
💡 Make-Ahead & Storage: This dessert must be made at least 4 hours in advance to allow the gelatin to set properly in the refrigerator.
