Instructions

Step 1: Custard Base

  1. Soak 2 tbsp gelatin in 1/3 cup cold water.
  2. Beat 2 egg yolks with 1/2 cup sugar.
  3. Pour 1 1/2 cups hot milk over the egg yolks mixture, add 1/2 tsp salt, and cook over a double boiler until the mixture coats the back of a spoon.
  4. Stir in the soaked gelatin and beat until completely dissolved; set aside to cool.

Step 2: Assembly

  1. Stir 1 cup applesauce and 2 tsp lemon juice into the cooled custard.
  2. Gently fold in the 2 beaten egg whites, 1/2 - 1 cup whipped cream, and 1/2 tsp vanilla extract.
  3. Pour into a mold and chill until set.

💡 Make-Ahead & Storage: This dessert must be made at least 4 hours in advance to allow the gelatin to set properly in the refrigerator.
