Instructions

Step 1: Prep and Mix

  1. Preheat your oven to 375°F. Grease and flour an 8-inch square cake pan.
  2. In a large mixing bowl, sift together the 1 1/4 cups cake flour, 3/4 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  3. Add the 1/3 cup Spry, 1 teaspoon lemon rind, 1/2 cup milk, and 1 teaspoon vanilla to the bowl.
  4. Beat for about 2 minutes with an electric mixer on medium speed (or 150 vigorous strokes by hand), scraping the bowl and spoon frequently until smooth and well blended.

Step 2: Bake and Finish

  1. Add the unbeaten 1 egg and beat for 2 more minutes until light and fluffy.
  2. Pour the batter into the prepared pan.
  3. Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean and the top springs back lightly.
  4. Let the cake cool completely before frosting with Lemon Cake Icing.
