Instructions
Step 1: Prepare the Dough
- Preheat your oven to 375°F and lightly grease a baking sheet.
- In a medium bowl, sift together the 2 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, 3/4 teaspoon salt, and your choice of 1 teaspoon cinnamon or 1/2 teaspoon nutmeg.
- In a large bowl, combine the 1 cup granulated sugar and 3/4 cup cooking oil.
- Add the 2 eggs to the oil mixture one at a time, beating well after each addition, then stir in the 1 teaspoon vanilla extract.
- Add the flour mixture to the wet ingredients and beat until a smooth dough forms.
Step 2: Shape and Bake
- Pour the additional granulated sugar into a shallow bowl.
- Shape the dough into 1-inch balls and roll each in the granulated sugar until coated completely.
- Place the balls on the prepared baking sheet and bake for 10 to 12 minutes until the edges are lightly golden and set.
