Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 375°F and lightly grease a baking sheet.
  2. In a medium bowl, sift together the 2 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, 3/4 teaspoon salt, and your choice of 1 teaspoon cinnamon or 1/2 teaspoon nutmeg.
  3. In a large bowl, combine the 1 cup granulated sugar and 3/4 cup cooking oil.
  4. Add the 2 eggs to the oil mixture one at a time, beating well after each addition, then stir in the 1 teaspoon vanilla extract.
  5. Add the flour mixture to the wet ingredients and beat until a smooth dough forms.

Step 2: Shape and Bake

  1. Pour the additional granulated sugar into a shallow bowl.
  2. Shape the dough into 1-inch balls and roll each in the granulated sugar until coated completely.
  3. Place the balls on the prepared baking sheet and bake for 10 to 12 minutes until the edges are lightly golden and set.
