Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F. Grease a 9x13 inch pan.
  2. Empty the dry yellow cake mix into a bowl and reserve 1 cup of it for the topping.
  3. To the remaining cake mix, add ½ cup melted margarine and 1 egg. Mix until combined and press the mixture firmly into the bottom of the prepared pan until even.

Step 2: Prepare the Filling

  1. In a separate bowl, combine the 1 (30 oz) can pumpkin pie mix, 2 eggs, and ⅔ cup milk.
  2. Whisk until smooth and thoroughly combined.
  3. Pour the filling evenly over the crust in the 9x13 inch pan.

Step 3: Prepare the Topping

  1. In a small bowl, combine the 1 cup reserved yellow cake mix, ¼ cup sugar, and 1 teaspoon cinnamon.
  2. Cut in the ¼ cup cold oleo with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Sprinkle this streusel topping evenly over the pumpkin filling.

Step 4: Bake

  1. Bake for 45-50 minutes, or until a knife inserted near the center comes out clean and the topping is golden and set.
