Instructions

Step 1: Prepare the Base

  1. In a saucepan, heat the 1 1/2 cups half-and-half until scalded, ensuring bubbles form around the edges without reaching a boil.

Step 2: Blend and Set

  1. Combine the 1 cup chocolate chips, 1 1/2 cups half-and-half, 2 egg yolks, and 3 tablespoons brandy in a blender.
  2. Secure the lid and process at high speed until the mixture is completely smooth and emulsified.
  3. Pour the mixture into individual ramekins, filling them two-thirds full.
  4. Cover and refrigerate for at least 3 hours, or until the custard is firm to the touch.

Step 3: Serve

  1. Top each ramekin with a dollop of whipped cream and serve alongside crisp cookies.
