Instructions

Step 1: Prepare the Skillet and Topping

  1. Preheat your oven to 375°F.
  2. In a 9-inch oven-safe skillet, melt the 1/3 cup butter over low heat.
  3. Sprinkle the 1 cup brown sugar evenly over the melted butter.
  4. Arrange the 1 (20-ounce) can sliced pineapple and 2 tablespoons pecans attractively on top of the brown sugar mixture.

Step 2: Mix the Batter

  1. In a bowl, sift together the 1 cup cake flour, 1 teaspoon baking powder, and 1/8 teaspoon salt.
  2. In a separate large bowl, beat the 3 large eggs (yolks only) until light and pale, then gradually beat in the 1 cup granulated sugar until thick.
  3. Stir the 5 tablespoons pineapple juice into the yolk mixture, then gently mix in the sifted dry ingredients until just combined.
  4. In a clean bowl, beat the remaining egg whites until stiff peaks form, and gently fold them into the cake batter in three additions.

Step 3: Bake and Invert

  1. Carefully pour the cake batter over the pineapple and pecans in the skillet, spreading it evenly.
  2. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown and fragrant.
