Instructions

Step 1: Preparation and Creaming

  1. Preheat your oven to 375°F and grease your cookie sheets.
  2. In a large bowl, cream the 1/2 cup shortening with the 1/2 cup granulated sugar and 1/2 cup brown sugar until light and fluffy.
  3. Beat in the 1 egg and the 1 cup crushed pineapple until well incorporated.

Step 2: Mixing and Baking

  1. In a separate bowl, whisk together the 1 cup flour, 1/2 tsp baking soda, 1/2 tsp salt, 1/2 tsp cinnamon, and 1/8 tsp nutmeg.
  2. Gradually add the dry ingredients to the creamed mixture and stir until just combined.
  3. By hand, fold in the 1 1/2 cups oats and 1/2 cup walnuts.
