Step 1: Prepare the Dough
- In a food processor, combine the 9 1/2 ounces flour, 2 1/2 tablespoons sugar, 1 tablespoon lemon zest, and 1 teaspoon salt. Pulse a few times to combine.
- Add the 4 1/2 ounces chilled butter and 1 1/2 ounces lard to the processor. Pulse until the mixture resembles coarse, crumbly sand.
- Add the 1 to 3 tablespoons ice water one tablespoon at a time, pulsing briefly after each addition until the dough just begins to come together.
- Turn the dough out onto a clean surface, form it into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

- Preheat the oven to 375°F. Place the 4-5 cups frozen fruit in a 9-inch baking dish.
- On a lightly floured surface, roll out the chilled dough and place it on top of the fruit.
- Bake for 30-40 minutes, or until the crust is golden brown and the fruit filling is hot and bubbly.
💡 Make-Ahead & Storage: The dough disk can be refrigerated for up to 2 days or frozen for up to 1 month before rolling.
