Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F and lightly grease a cookie sheet.
  2. In a medium bowl, stir together the 1 1/4 cups flour, 1 tsp ginger, 1/4 tsp cloves, 1/2 tsp baking soda, and 1/8 tsp salt.
  3. In a large mixer bowl, cream the 1/2 cup butter, 1/2 cup brown sugar, and 2 tbsp molasses until light and fluffy.
  4. Add the 1/2 egg and grated orange peel; beat well until combined.
  5. Gradually stir in the flour mixture until just combined, then fold in the 1/2 cup nuts by hand.

Step 2: Bake and Cool

  1. Drop the dough by rounded teaspoonfuls about 2 inches apart onto the prepared cookie sheet.
  2. Bake for 12 minutes, or until the edges are lightly browned and the centers are set.
  3. Remove from the oven and transfer to a wire rack to cool completely.
