Instructions
Step 1: Prep and Mix Custard
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the 2 large eggs, 1 1/2 cups milk, 1/4 cup sugar, 1 tablespoon soft butter, 1 teaspoon vanilla, 1/8 teaspoon salt, 2 cups cooked rice, 1/3 cup raisins, 1/2 teaspoon lemon rind, and 1 teaspoon lemon juice. Mix well until fully incorporated.
Step 2: Assemble and Bake
- Pour the rice mixture into a greased 1-quart baking dish.
- In a small bowl, toss the 3 tablespoons soft bread crumbs with the 2 tablespoons melted butter until thoroughly combined.
- Sprinkle the buttered bread crumbs evenly over the top of the pudding.
