Instructions

Step 1: Prep and Mix Custard

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the 2 large eggs, 1 1/2 cups milk, 1/4 cup sugar, 1 tablespoon soft butter, 1 teaspoon vanilla, 1/8 teaspoon salt, 2 cups cooked rice, 1/3 cup raisins, 1/2 teaspoon lemon rind, and 1 teaspoon lemon juice. Mix well until fully incorporated.

Step 2: Assemble and Bake

  1. Pour the rice mixture into a greased 1-quart baking dish.
  2. In a small bowl, toss the 3 tablespoons soft bread crumbs with the 2 tablespoons melted butter until thoroughly combined.
  3. Sprinkle the buttered bread crumbs evenly over the top of the pudding.
  4. Bake for 40 to 45 minutes, or until a knife inserted near the center comes out clean and the pudding is set and golden brown.
