Instructions

Step 1: Prep and Noodles

  1. Preheat your oven to 375°F (190°C). Generously butter a large 9x13-inch baking dish.
  2. Cook the 1 package egg noodles according to package directions until al dente. Drain well in a colander.

Step 2: Custard Base

  1. In a large bowl, beat the 6 egg yolks. Then, beat in the 3/4 cup sugar, lemon juice, and orange juice until smooth.
  2. Stir the 1 pint sour cream, 1 pint cottage cheese, lemon zest, and orange zest into the egg yolk mixture until fully combined.
  3. Gently fold the cooked noodles and 1/2 cup white raisins into the cheese mixture.

Step 3: Egg Whites and Assembly

  1. In a separate, clean bowl, beat the 6 egg whites with an electric mixer until stiff peaks form.
  2. Carefully fold the beaten egg whites into the noodle mixture in two or three additions until just combined.
  3. Pour the final mixture into the prepared baking dish and spread evenly.

Step 4: Topping and Baking

  1. Dot the top with small pieces of butter and sprinkle generously with a mixture of sugar and cinnamon.
  2. Bake for 1 hour, or until the pudding is set firmly in the center and the top is golden brown and fragrant.

💡 Make-Ahead & Storage: You can assemble the pudding up to the point of folding in the beaten egg whites and keep it covered in the refrigerator until you are ready to bake.
