Instructions

Step 1: Prepare and Cream

  1. Preheat your oven to 350°F and grease your cookie sheets.
  2. In a large bowl, cream together the 1/2 cup butter or oleo and 3/4 cup sugar until light, fluffy, and pale.
  3. Beat in the 1 large egg and 1 tsp grated lemon rind until well incorporated.

Step 2: Combine and Bake

  1. In a separate bowl, sift together the 1 1/2 cups flour, 1/2 tsp ground ginger, 1/2 tsp baking soda, and 1/4 tsp salt.
  2. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  3. By hand, stir in the 1/4 cup finely chopped candied ginger.
  4. Drop by rounded teaspoonfuls onto the prepared cookie sheets and sprinkle the tops with a little extra sugar.
  5. Bake for 8 to 10 minutes, or until the edges are lightly browned and the centers are set.
