Instructions
Step 1: Prepare the Gelatin and Melon
- Dissolve 1 pkg. raspberry flavored gelatin in 2 cups boiling water and set aside to cool.
- Slice one end off the 1 large honeydew melon and use a long-handled spoon to scoop out all seeds; peel the entire exterior.
- Place the melon upright in a heavy bowl to stabilize it, then pour the cooled gelatin into the cavity until 3/4 full.
Step 2: Fill and Chill
- Refrigerate until the gelatin reaches the consistency of egg whites.
- Drop the 1 cubed apple, 1 cubed pear, 1 cubed peach, and 12 seedless grapes into the cavity.
- Top off with remaining gelatin if needed and chill until completely firm, preferably overnight.
Step 3: Coat and Serve
- Mash the 12 oz cream cheese with a few drops of light cream until spreadable.
- Dry the outside of the honeydew melon thoroughly with paper toweling, then spread the cream cheese mixture over the entire surface.
- Roll the coated melon in chopped pecans and chill again until the coating is firm.
- Line a platter with 1 head romaine lettuce, slice the melon crosswise into 1-inch thick rings, and arrange on the platter.
