Instructions

Step 1: Prepare the Base

  1. Place the 1 large can evaporated milk and a deep mixing bowl in the freezer for at least 30 minutes to ensure it is well-chilled.

Step 2: Whip the Filling

  1. Pour the 1 large can evaporated milk into the chilled bowl and whip with an electric mixer on high speed until thick and stiff peaks form.
  2. With the mixer on low, gradually add the 1 cup sugar, then fold in the 2 lemons (juice and zest) until just combined.

Step 3: Assemble and Freeze

  1. Line the bottom of an 8x8 inch baking dish with half of the 1 1/2 cups graham or vanilla wafer crumbs.
  2. Pour the lemon filling over the crumb base and spread evenly, then sprinkle the remaining 1 1/2 cups graham or vanilla wafer crumbs on top.
  3. Cover and freeze for at least 4-6 hours until the mixture is firm to the touch.

💡 Make-Ahead & Storage: This dessert is best kept frozen; however, you can double the recipe to serve it as a softer, refrigerated mousse-style dessert.
